Sweet Potato Hash
1 or 2 Medium/Large Sweet Potatoes diced into small 1/4" pieces
1 small onion
1 Small/Medium Bell Pepper or equivalent mix of red, yellow, green peppers
1/2 to 1 pound ground sausage (pork or turkey)
salt and pepper to taste
garlic powder and onion powder to taste
Tuscan Blend Spices to taste
In a large non stick skillet saute the sweet potatoes with the pepper and onions for approximately 3 minutes in light oil. Add small amount of water, roughly 1/8 to 1/4 of a cup, and cover with lid. Cook until potatoes are tender and water is evaporated. Remove the potato mixture from the pan and cover to keep warm.
In the same skillet brown the sausage until no longer pink. Remove sausage from pan and drain the fat. Return sausage and potato mixture to the skillet and cook until desired crispness or until evenly warmed.
Makes approximately 4 servings
